The first thing that you must do is accept that your relationship has ended, and you are single again. No matter how disappointed you are that your girlfriend is in a new relationship, you must not let your feelings govern how you handle this situation.
For instance, if you bump into your ex and her new boyfriend, be civil and greet them with a smile. Do this even though you have the urge to tell the guy that he is a jerk. Your ex will think very highly of you if you behave in a mature way. Everything positive that you do from now on will be a point in your favor when you try getting your girlfriend back.
The whole idea is that you must try to convince her that you are the one she should really be with. However, the final decision is up to her, so all you can do really is to be respectful to her and her new guy, and let her form her own opinion of you and the new man in her life. As mentioned before, this type of reaction from you can only raise your chances of getting your girlfriend back.
You must also realize that this is probably going to take some time, so don't become impatient and expect it to happen in a few days. The thing is, having you behave in this way is going to confuse your ex. She obviously has feelings for this other guy or she wouldn't be with him. However, she expected a totally different reaction from you.
If you were nasty to her and her new boyfriend, it would have been easier for her to be angry with you and forget about you altogether. But with you being so understanding will make it difficult for her to not think about you a lot of the time, and hopefully result in you getting your girlfriend back.
